I use this to make blue rice. The color is absolutely beautiful, The flowers are very pigmented and gives the rice an intense blue. You need to steep the flowers in hot water to get the blue water first, then use that blue water to cook the rice. (and not add the flowers to the rice to cook, otherwise the color does not dissipate well)
